Pat Perrenoud’s Zucchini Bread

Equipment

  • 2 loaf pans

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups zucchini grated
  • 3 Tbsps vanilla
  • 1 tsp salt
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 3 tsp cinnamon
  • 2 cups chopped nuts
  • 3 cups flour

Instructions

  • mix together dry ingredients
  • mix together eggs, oil, and vanilla
  • stir dry ingredients into wet ingredients
  • pour into two loaf pans
  • bake for 60 minutes in a 325 oven

Notes

My friend, Pat shares these family recipes with me.  They are tried and true.  This recipe was given to her by her Uncle Bob’s neighbor, Beu Bishop,  it says in the notes.  It even has her phone number.  
Pat says she makes this chocolate by adding 6 T. of cocoa and 3 T. butter.
