Ness’ Sweet Potato Soup

Ingredients

  • 4 large sweet potatoes
  • cooking oil
  • 2 Tbsp butter
  • 1 medium onion chopped
  • 2-3 stalks celery chopped
  • tsp minced garlic
  • 1 tsp dried oregano
  • ¾ tsp ground ginger
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cups chicken broth
  • 14 oz canned coconut milk

Instructions

  • Peel sweet potatoes, cube and boil until potato is soft.
  • While sweet potatoes are boiling, heat a large saucepan over medium heat. Add butter and allow to melt. Add diced onion, celery and cook, stirring constantly for 1 minute.
  • Stir in broth and coconut milk. Bring to a low simmer; continue to simmer on low heat until potatoes are ready.
  • When potatoes are done, drain and mash.
  • Whisk in mashed sweet potatoes until combined. Salt and pepper to taste. For a smoother consistency, carefully transfer soup to a food processor or blender (work in batches if needed_, and process until smooth.
  • Serve warm. garnish with chopped green onions or chives, toasted pecans are good too!
