My Favorite Egg Casserole

Ingredients

  • sausage, cubed ham, or chopped bacon or some of eac
  • 8 oz pkg cream cheese
  • 8 eggs
  • vegetables i.e. onions, peppers, spinach, zucchini optional, I frequently make it without veggies
  • shredded cheese for topping

Instructions

  • Place cooked meat and sautéed vegetables in the bottom of a 9 x 13 baking dish.
  • In a blender, blend cream cheese and eggs until creamy
  • Pour egg mixture on top of meat mixture
  • Top with shredded cheese.
  • Bake at 350 until set anywhere from 20-30 minutes…I just watch it.

Notes

This can be made as large or small as you like.  Just use equal ounces of cream cheese to the number of eggs. 
It’s an easy way to make eggs when I’m making waffles.
