Mom’s Mashed Potatoes

Ingredients

  • 6-8 large potatoes yukon gold preferred
  • ¼-½ cup butter
  • ½ tsp salt
  • ¼ cup sour cream

Instructions

  • Peel potatoes (can leave peel on if you prefer), cut into approx 1-2" cubes
  • Place in large pot, cover with water. 
  • Boil for approx 15 min. 
  • Use fork to see if they are done.  Fork should go into potato easily.  Drain. 
  • Add margarine, salt & cream and mash.
  • Variety:  You can substitute cream for milk or cream cheese. 
  • Variety: place in greased cake pan, top with grated cheese and chives. bake at 350 until cheese melts.  Approx. 10 min. Yum!
