Mom’s Mashed Potatoes

- 6-8 large potatoes yukon gold preferred
- ¼-½ cup butter
- ½ tsp salt
- ¼ cup sour cream
Peel potatoes (can leave peel on if you prefer), cut into approx 1-2" cubes
Place in large pot, cover with water.
Boil for approx 15 min.
Use fork to see if they are done. Fork should go into potato easily. Drain.
Add margarine, salt & cream and mash.
Variety: You can substitute cream for milk or cream cheese.
Variety: place in greased cake pan, top with grated cheese and chives. bake at 350 until cheese melts. Approx. 10 min. Yum!
