Preheat oven to 400º. Spray 9 x 13 cake pan.
In large pot melt margarine & then add flour.
Gradually add milk til you get an even consistency of gravy. It might take a little while to thicken but don’t leave it unattended or it will scorch the bottom. If it is too thick add more milk.
Add cheese and blend in. Add mustard.
Gravy needs to be thick enough to allow you to drop eggs easily into it. So thin it down if the cheese made it too thick.
Add crumbled bacon to the cheese sauce.
Pour it into the 9 x 13.
Break shells and drop eggs into the gravy, evenly distributing them in the 9 x 13.
Bake in oven for approx. You will have to watch your eggs if you do not want them overcooked. 10-15 min.
Serve over hot homemade biscuits!
