Mom’s Egg, Cheese Casserole

Ingredients

  • ½ cup margarine
  • ½ cup flour
  • 3-4 cups milk
  • 1 cup grated cheese
  • 2 tsp mustard
  • ¼ cup crumbled bacon
  • 6 eggs

Instructions

  • Preheat oven to 400º.  Spray 9 x 13 cake pan.
  • In large pot melt margarine & then add flour. 
  • Gradually add milk til you get an even consistency of gravy.  It might take a little while to thicken but don’t leave it unattended or it will scorch the bottom.  If it is too thick add more milk. 
  • Add cheese and blend in.  Add mustard. 
  • Gravy needs to be thick enough to allow you to drop eggs easily into it.  So thin it down if the cheese made it too thick. 
  • Add crumbled bacon to the cheese sauce. 
  • Pour it into the 9 x 13. 
  • Break shells and drop eggs into the gravy, evenly distributing them in the 9 x 13.
  • Bake in oven for approx. You will have to watch your eggs if you do not want them overcooked.  10-15 min. 
  • Serve over hot homemade biscuits!
