Mini Cheese Cakes

Ingredients

  • 12 vanilla wafers*
  • 2 8 oz pkgs cream cheese
  • ½ cup Sugar
  • 1 tsp vanilla
  • 2 eggs

Instructions

  • Preheat oven to 325°
  • Beat cream cheese until light and fluffy.
  • Add eggs one at a time. Beat 10 min.
  • Add sugar and vanilla. Blend well
  • Place wafer into paper lined muffin cup.
  • Fill ¾ full with cream cheese mixture.
  • Bake 25 min. Let cool
  • Top with your favorite fruit.
  • *can substitute vanilla wafer with oreo cookies.

Notes

Double recipe to make 24-28 little cakes.
