Lemon Blueberry Bread

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp butter softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp lemon extract
  • 1/2 cup milk
  • 1 cup fresh blueberries

Instructions

  • Preheat oven to 350 F.
  • Mix all dry ingredients together in a small bowl.
  • In a large bowl, mix together butter and sugar until fluffy.
  • Add eggs and mix together well. 
  • Add Vanilla and lemon extract.
  • Gradually add flour mixture alternately with milk. Mix until just combined.
  •  Gently fold in blueberries.
  •  Pour into a large, greased loaf pan and bake for 55 to 65 minutes.
