Kathie Hansen’s Favorite Green Salad

- 2 heads romaine lettuce
- 2-3 cut up mangos
- ½ cup feta cheese
- 5 avocados diced
- 1 whole cooked chicken deboned
Candied Nuts:
- 2 cups sugar
- 1-2 cups favorite nut (almonds, pecans, walnuts)
Dressing:
- 1 bottle Lite-house Blue cheese vinaigrette or favorite one
Candied Nuts:
Place sugar in fry pan on high heat until it starts to melt, turn down to medium.
Add nuts. Mix well
Line a cookie sheet with parchment paper and pour nuts evenly onto the sheet.
Allow nuts to harden, then break into pieces.
Salad:
Break lettuce into bite-sized pieces, place into bowl.
Add mangos, feta cheese, avocados & chicken
Top with candied nuts and use your favorite vinaigrette.
