Jilli’s Sweet Potatoes

Ingredients

  • 5 sweet potatoes
  • ¼ tsp salt
  • ½ cup brown sugar
  • ¼ cup butter
  • 2 Tbsp heavy cream
  • 2 eggs
  • 1 tsp Vanilla
  • ½ tsp cinnamon

Topping:

  • ¼ cup butter
  • 3 Tbsp flour
  • ¾ cup brown sugar
  • ½ cup chopped pecans

Instructions

  • Peel & cut sweet potatoes into bite size pieces, boil till tender, then mash them.
  • Add all other ingredients (except for the topping) to the sweet potatoes.
  • Place into a greased 9×13 baking dish. 
  • Combine topping ingredients and use a pastry blender to make a coarse meal. 
  • Sprinkle over potatoes.  Bake at 350º for 35 min.
