Jewish Penicillin Soup & Dumplings

Ingredients

  • 1 whole chicken, raw (can use Costco Rotisserie chicken, but not as healthy)
  • 1 cup celery, chopped
  • 1 large onion, chopped
  • 1 cup carrots, sliced
  • chicken broth, enough to cover all veggies and meat

Dumplings

  • 1 cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 Tbsp salad oil

Instructions

  • If using a raw chicken:You can either use your crock pot, or stove top.  Place chicken in pot and add approx. 1 to 2 c water
  • I also add 1 chicken bouillon cube for each cup of water used. Cover pot and let slow cook until chicken is done.  This can take about 1 to 2 hours.
  • If you're using a crockpot: add approx. 2-3 cups water & chicken bouillon. Cook 6 hrs on low
  • Once cooked. Remove the chicken from pot. Allow chicken to cool completely.
  • Start the deboning process. Place meat back into the juices from the pot.
  • Add your vegetables to the pot. Bring to a boil, then turn down and simmer for approx. 20 min,

Dumplings

  • Combine in a small bowl all ingredients and mix well
  • Drop by the spoonful into the hot chicken soup.
  • Place lid on pot and let cook for another 10-15. min.
