Egyptian One Eyed Sandwich

Ingredients

  • 1 slice bread
  • 1 egg
  • butter or margarine
  • salt and pepper

Instructions

  • Butter both sides of the bread.  (When buttering the opposite side, place on a plate and use a pancake turner to pick up.), cut the middle of the bread out with the top of a glass or biscuit cutter.
  • Place on a hot griddle. 
  • Crack egg into hole of bread. 
  • Griddle both sides until nice and brown, yet don’t overcook the egg. 
  • The little round piece you cut out can be fried on both sides and used to dip into the egg.
