Christmas Breakfast Casserole
Ingredients
- 1 onion diced
- 1 lb breakfast sausage
- 4 cups shredded frozen potatoes thawed
- 2 cups shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 1 1/2 cups cottage cheese
- 6 eggs well beaten
Instructions
- Preheat oven to 350.
- Brown sausage and onions together.
- Add potatoes and cheeses and mix well.
- Add into well greased 9x13 pan, and pour eggs on top.
- Bake until golden brown, about 45 minutes.
