Chocolate Chip Pumpkin Loaf

Ingredients

  • 1/2 cup butter unsalted
  • 1 1/4 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin NOT pie filling
  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/3 cup milk
  • 3/4 cup chocolate chips
  • 1/4 walnuts or pecans chopped (optional)

Instructions

  • Heat oven to 350. Grease & flour two 9 x 5 loaf pans.
  • Using electric mixer, med. Speed, cream butter in large bowl, gradually adding sugar.
  • Add eggs, one at a time, beating well after each one.
  • Add vanilla & pumpkin.
  • In med. bowl combine flour, soda, baking powder, salt & spices.  Mix well.
  • With wooden spoon blend a third of the flour mixture into the butter mixture, add half the milk
  •  Alternate remaining flour & milk.
  • Fold in Choc. Chips & nuts.  Bake for 50 to 60 min.
  •  After baking let stand in pan for about 15 min.  Then remove loaf from pan.
