Denise’s Refried Beans

Ingredients

  • 1 lb pinto beans
  • 5 cloves garlic
  • 1+ Tbsp salt
  • 1 lb grated cheddar cheese

Instructions

  • clean and soak pinto beans over night or at least 3 hours prior to cooking
  • Fill 6 qt. saucepan 3/4 full of water. Bring to boil
  • Drain and rinse soaked beans. Add to boiling water
  • add cloves of garlic
  • Cover pot and bring back to boil and reduce down to a simmering boil. Be sure to allow steam to escape from pot.
  • Continue cooking beans for 4-5 hours. Check on beans hourly
  • Once cooked, mash and salt beans. (add salt gradually, up to a few tablespoons, season to your taste).
  • Add grated cheddar cheese to beans and mix well.
  • Place pot in refrigerator uncovered until ready to serve
  • To warm beans up, heat oil in pan and place beans into ban. Stir & heat.
