clean and soak pinto beans over night or at least 3 hours prior to cooking
Fill 6 qt. saucepan 3/4 full of water. Bring to boil
Drain and rinse soaked beans. Add to boiling water
add cloves of garlic
Cover pot and bring back to boil and reduce down to a simmering boil. Be sure to allow steam to escape from pot.
Continue cooking beans for 4-5 hours. Check on beans hourly
Once cooked, mash and salt beans. (add salt gradually, up to a few tablespoons, season to your taste).
Add grated cheddar cheese to beans and mix well.
Place pot in refrigerator uncovered until ready to serve
To warm beans up, heat oil in pan and place beans into ban. Stir & heat.
