Harvest Loaf

Ingredients

Cream together:

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs

Add 3/4 cup mashed pumpkin & mix well.

Mix In:

  • 1 3/4 cup flour
  • 1 tsp soda
  • 1/2 tsp salt
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1 tsp cinnamon

Add 3/4 cup chocolate chips to above

Instructions

  • Preheat oven to 350 F and grease 9×5 loaf pan.
  • Pour batter into loaf pan.
  • Bake @ 350 F for 65 to 75 minutes
  • Cool & glaze

Notes

Note from Emily: Carol didn’t provide a glaze recipe with her Harvest Loaf recipe but a simple glaze is 1 cup powdered sugar, 1 tbsp melted butter, 1/2 tsp vanilla & 1 1/2 to 2 tbsp cream or milk.  Be sure to allow the bread to completely cool before glazing or the glaze will absorb into the bread.
