Enchilada (Taco) Casserole

Ingredients

  • 1 lb Ground Turkey or Beef
  • 1 Tbsp taco seasoning
  • 10 oz mild enchilada sauce
  • ½ cup salsa
  • 1 can black beans drained & rinsed
  • ¾-1 cup sour cream
  • 6-8 corn tortillas
  • 1-2 cups grated mexican cheese can use cheddar
  • chopped lettuce
  • 1 avocado

Instructions

  • Fry ground meat. Add seasonings, salsa, sour cream and black beans
  • In a 9×13 dish, spray bottom with non stick spray. Cover bottom with corn tortillas. Cut to fit if necessary
  • Place half of the prepared meat on top of corn tortillas
  • Sprinkle generously with grated cheese
  • Place another layer of corn tortillas on top of grated cheese. Repeat with meat and top with remaining grated cheese
  • Bake at 350° for approx 15-20 min.
  • Top with shredded lettuce, avocados and more salsa
