Enchilada (Taco) Casserole
Ingredients
- 1 lb Ground Turkey or Beef
- 1 Tbsp taco seasoning
- 10 oz mild enchilada sauce
- ½ cup salsa
- 1 can black beans drained & rinsed
- ¾-1 cup sour cream
- 6-8 corn tortillas
- 1-2 cups grated mexican cheese can use cheddar
- chopped lettuce
- 1 avocado
Instructions
- Fry ground meat. Add seasonings, salsa, sour cream and black beans
- In a 9×13 dish, spray bottom with non stick spray. Cover bottom with corn tortillas. Cut to fit if necessary
- Place half of the prepared meat on top of corn tortillas
- Sprinkle generously with grated cheese
- Place another layer of corn tortillas on top of grated cheese. Repeat with meat and top with remaining grated cheese
- Bake at 350° for approx 15-20 min.
- Top with shredded lettuce, avocados and more salsa
