Scalloped Corn

Ingredients

  • 1 can creamed corn
  • 1 cup milk
  • 1 cup dried bread crumbs divided
  • 3 Tbsp pimento chopped
  • 1/4 cup chopped onion
  • dash of pepper
  • 2 egg whites stiffly beaten

Instructions

  • Combine corn and milk, 3/4 cup bread crumbs, pimento, and pepper. Mix well
  • Fold in stiffly beaten egg whites.
  • Pour in buttered 1 quart baking dish.
  • Top with remaining bread crumbs.
  • Bake at 350 degrees for 45 minutes.
  • Variation: omit pimento and add 1/2-1 cup chopped celery and substitute one egg for beaten egg whites.
