Potato Refrigerator Rolls
Servings: 3 Dozen
Ingredients
- 3 Tbsp yeast
- 4 eggs
- 3 cups warm water
- 1 Tbsp molasses
- 1 ⅓ cup white sugar
- 12 cups white flour
- 2 cups warm mashed potatoes
- 2 cups whole wheat flour
- 1 ⅓ cups shortening (margarine)
- 1 Tbsp salt
Instructions
- Place yeast, warm water & sugar in bread mixer.
- Mix in warm potatoes, salt & margarine together until margarine is melted.
- Add beaten eggs.
- Add whole wheat flour, molasses & white flour.
- Knead til soft dough is formed.
- Knead 6 minutes.
- Let rise til double.
- Shape into rolls.
This recipe makes approx 3 doz. I usually cook up enough for dinner, but I freeze the rest of the formed rolls in the dough form and save for a later day.
Not Frozen:
- Place on a greased pan.
- Let rise til double.
- Bake @ 400 for 10-12 minutes.
Frozen:
- Place on greased pan and let rise for about 3 hours, depending on the temp in your house.
- So until they look double. Bake @ 400 for 10-12 minutes.
Notes
This recipe makes approx 3 doz. I usually cook up enough for dinner, but I freeze the rest of the formed rolls in the dough form and save for a later day.
