Potato Refrigerator Rolls

Ingredients

  • 3 Tbsp yeast
  • 4 eggs
  • 3 cups warm water
  • 1 Tbsp molasses
  • 1 ⅓ cup sugar
  • 12 cups flour
  • 2 cups warm mashed potatoes
  • 2 cups whole wheat flour
  • 1 ⅓ cups shortening (margarine)
  • 1 Tbsp salt

Instructions

  • Place yeast, warm water & sugar in bread mixer.
  • Mix in warm potatoes, salt & margarine together until margarine is melted.
  • Add beaten eggs.
  •  Add whole wheat flour, molasses & white flour.
  • Knead til soft dough is formed.
  • Knead 6 minutes. 
  • Let rise til double.
  • Shape into rolls.

Not Frozen:

  •  Place on a greased pan.
  • Let rise til double.  Bake

Frozen:

  • Place on greased pan and let rise for about 3 hours, depending on the temp in your house.  So until they look double.
  • Bake

Notes

This recipe makes approx 3 doz. I usually cook up enough for dinner, but I freeze the rest of the formed rolls in the dough form and save for a later day.
Prep Time: 2 + hours / Bake: 400 10-12 min.
