Banana Cake Bars

Ingredients

  • cups cake flour 2¼ c reg flour & ¼ c cornstarch
  • cup buttermilk
  • 1⅔ cups sugar
  • 2 eggs
  • tsp baking powder
  • cup shortening
  • 1 tsp baking soda
  • cup mashed bananas
  • 1 tsp salt
  • Nuts, if desired
  • 1 tsp vanilla

Instructions

  • Blend dry ingredients
  • Mix ⅓ c buttermilk into dry ingredients for 2 min. 
  • Add remaining buttermilk, eggs & vanilla, mix for 2 more min. 
  • Pour into a greased cookie sheet. 
  • Bake at 350 for 20-30 minutes

Notes

You can use the powdered buttermilk in this recipe.  Add powder to dry ingredients and then use water as the liquid.  I make this in a cake pan and use butter cream frosting.  -Carol
