Basic Cookie Mix

Ingredients

  • 2 cups shortening may substitute ½ c peanut butter for ½ c shortening
  • cup brown sugar
  • cup white sugar
  • 2 tsp almond extract
  • 4 eggs
  • 2 tsp baking soda
  • 1 tsp salt
  • cup flour may substitute rice krispies, crushed corn flakes, or quick oats for part of the flour

Instructions

  • Blend all the wet ingredients and then add all the dry until the dough is slightly sticky but can be rolled in balls.  This is a LARGE batch.

Options:

  • Add 1½ bags chocolate and/or other flavor chips. Bake as for regular cookies at 350 degrees.
  • Roll into 2 inch balls and flatten slightly. Gently press M&Ms on top for a large cookie. Bake at 350 degrees.
  • Shape a 2 inch diameter log of desired length of dough on plastic wrap. Wrap in plastic and then in freezer paper. Label and freeze. When ready to use, thaw slightly. Slice and Bake. This freezer technique works with most kinds of cookies!
