Marshmallows

Ingredients

  • 2 pkg plain gelatin
  • 4 Tbsp cold water
  • cup sugar
  • ½ tsp vanilla
  • 1 cup boiling water

Instructions

  • Dissolve gelatin in cold water; add to boiling water (have mixing bowl hot) and stir until dissolved.  Add sugar.  Beat at high speed until very thick.  Add vanilla while beating.  Pour into a pan that has been dusted with powdered sugar.

Notes

These are good rolled in toasted coconut.  I especially like mine rolled in chopped nuts.  They would also be fun to dip in chocolate.  Grandma Ostler taught me how to make these and the toffee.  I can’t make them now without remembering our times together.  They are really quite easy to make and very yummy.
