English Toffee (tastes like Almond Roca)

Ingredients

  • 1 lb butter 4 cubes
  • 2 ½ cups sugar
  • 1 cup water
  • 4 Tbsp light corn syrup
  • 1 tsp vanilla
  • chopped nuts
  • chocolate chips

Instructions

  • Cook sugar, syrup, water, and butter at medium high heat until it boils hard, stirring constantly, for about 20-30 minutes.  Mixture will be golden brown (soft crack stage).  Pour immediately in the pan. 
  • Grind nuts and chocolate (I use chocolate chips).  Top with nuts and chocolate.  Spread.  Make an 11×15 pan.
