Mini Cheese Cakes
Ingredients
- 12 vanilla wafers*
- 2 8 oz pkgs cream cheese
- ½ cup Sugar
- 1 tsp vanilla
- 2 eggs
Instructions
- Preheat oven to 325°
- Beat cream cheese until light and fluffy.
- Add eggs one at a time. Beat 10 min.
- Add sugar and vanilla. Blend well
- Place wafer into paper lined muffin cup.
- Fill ¾ full with cream cheese mixture.
- Bake 25 min. Let cool
- Top with your favorite fruit.
- *can substitute vanilla wafer with oreo cookies.

Double recipe to make 24-28 little cakes.
