Carbonara

Ingredients

  • ½ onion chopped
  • 1 pkg bacon
  • ¼ cup olive oil
  • 2 Tbsp garlic minced

Cut bacon into small pieces and fry in a saucepan with oil, add onion and garlic, cook till onion is glassy.

In a bowl combine:

  • 1 egg yolk, per person plus 2 or 3 yolks
  • 3 Tbsp basil
  • 2 cups heavy cream
  • 1 Tbsp salt
  • ½ Tbsp pepper
  • ½ -1 cup parmesan cheese

Instructions

  • Cook pasta (spaghetti, linguine, etc.)  and drain.  Immediately pour cream mixture and bacon mixture over pasta.  Stir well and serve with garlic bread and parmesan cheese.
