Carrot Cake

Ingredients

Mix with a dough hook:

  • 2 cups flour
  • ¾ cup oil
  • 3 eggs
  • ½ cup shredded coconut
  • 2 cups sugar
  • ¾ cup applesauce
  • 2 cup grated carrots
  • 2 cups chopped walnuts
  • 1 small pkg instant vanilla pudding
  • 2 tsp soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 8 oz can crushed pineapple drain the juice

Instructions

  • Bake at 350° for 20 min. Reduce heat to 275° and cook for an additional 50 min.
  • Sometimes I put some foil over the top towards the end so it doesn't get too brown.
  • Test with a toothpick, you may have to bake a little longer.
  • Top with your favorite cream cheese frosting
