Rotini (tri-color) Pasta Salad

Ingredients

  • 1 10 oz pkg rotini pasta
  • 2 cups small broccoli florets
  • 1 cup cubed mozzarella cheese may use some cheddar too
  • ½ cup sliced pepperoni, halved (2 oz)
  • ½ cup red or green bell pepper strips cut pretty small
  • cup thinly sliced red onion
  • ½ cup bottled Italian dressing
  • 1 small can sliced olives

Instructions

  • Boil pasta for 8 min., rinse with cold water
  • combine all ingredients and toss to coat with dressing.
  • Serve immediately or cover and chill 2 hrs or overnight
  • May need to add a little more dressing.
