Taquito Quesadillas

Ingredients

  • Corn tortillas
  • shredded cheese
  • 1 (8oz) can chicken or 1 cup cooked, shredded chicken
  • 2 tsp taco seasoning

Instructions

  • Preheat oven to 400 degrees
  • Drain chicken and put into a bowl.  Stir in taco seasoning. 
  • Spread butter or vegetable oil on 2 corn tortillas.  Place one tortilla buttered side down on a cookie sheet.  Top with 2 spoonful's of chicken mixture and shredded cheese.  Lay the other tortilla buttered side up. 
  • Bake quesadilla for 8 min. Flip over carefully and bake for 8 minutes longer.  Flip over again and bake 5 minutes more.  This last flip ensures a crisp dish!
