Taco Soup Recipe

Ingredients

  • 1 lb ground beef can substitute ground turkey
  • 1 medium sweet onion chopped
  • 1 red bell pepper can substitute 1 can diced green chilies
  • 1-2 Tbsp Taco seasoning
  • ½ tsp garlic powder
  • 1 15 oz can black beans rinsed & drain
  • 1 15 oz can kidney beans rinsed & drained
  • 1 15 oz can pinto or white beans rinsed & drained
  • 1 15 oz frozen corn
  • 1 15 oz can tomato sauce
  • 1 10 oz can mexican or spiced tomatoes
  • 1 15 oz can diced tomatoes
  • ¼-½ cup salsa
  • ¼ cup chopped cilantro
  • salt and pepper to taste

Instructions

  • In large pot, add beef and cook over medium heat until done. Add onions and bell peppers and saute 3 minutes or until softened. Drain grease (if any) then stir in taco seasoning and garlic powder. Salt & pepper to taste.
  • Add beans, corn, tomato sauce, tomatoes and salsa until combined
  • simmer, stirring occasionally 20-30 min. Add additional water if soup becomes too thick. Stir in clinatro, salt & pepper to taste.
