Sam’s Favorite Chili

Ingredients

  • lbs ground beef can substitute ground turkey
  • 6 strips thick bacon
  • 1 15 oz. can kidney beans drained
  • 1 15 oz. can pinto beans drained
  • 1 15 oz. can black beans drained
  • 1 15 oz. can Fire Roasted Diced tomatoes with juice
  • 1 6 oz. can tomato paste
  • 1 red onion chopped
  • 1 red bell pepper seeded and chopped
  • 1 jalepeno seeded & minced (optional)
  • 2 cups beef stock
  • 1 Tbsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp smoked paprika
  • 1 Tbsp worcestershire sauce
  • 2 Tbsp chili powder
  • 1 Tbsp garlic minced

Garnish:

  • sour cream
  • cilantro
  • cheddar cheese shredded

Instructions

  • In large pot, add bacon and cook until crisp, stirring often to cook evenly
  • Remove bacon to a paper towel lined plate
  • Add onions and peppers and cook until tender
  • Add the meat and cook until browned
  • Drain off any excess grease, we just tilt the pot and use a large spoon. (Sam likes to leave this grease in for flavor)
  • Add all the remaining ingredients and 3/4 of the bacon and stir to combine.
  • Allow to simmer on low for about 2-3 hrs. You can transfer to crockpot and simmer for 2-3 hrs on low.
