Cream of ANYTHING Soup

Ingredients

Various vegetables which could include all or any of the following:

  • potatoes cubed
  • celery finely chopped
  • onions finely chopped
  • garlic minced
  • carrots chopped
  • corn
  • Zuchini chopped
  • asparagus chopped
  • broccoli cut into small pieces
  • mushrooms chopped
  • meat of your choice chicken, ham, clams, bacon

Instructions

  • In a large saucepan, put prepared vegetables in and cover with water. Simmer for about 15 minutes or until vegetables are tender.
  • I typically will add whatever meat I would like to add in with the vegetables. Some meat ideas are: Chicken, Bacon, Clams (add juice from the can in with the vegetables) or Ham.
  • While vegetables are cooking, in another large pot melt 2 cubes of butter (depending on how much soup you are making 2 cubes makes a large pot of soup. You can cut this recipe in half)
  • When butter is melted add 3/4 cups of flour and stir until blended
  • While stirring constantly add 1 quart of half and half (I have used canned milk when I don't have half & half on hand). Stir until thickened. This mixture should be very thick.
  • When sauce is thick and vegetables are tender, mix the two together.
  • We love this soup in our family. We like to top it with cheese and serve with homemade biscuits.
