Rice Chicken Soup

- 1 Tbsp minced onion
- 6 Tbsp butter or olive oil
- ½ cup flour
- 3 cups chicken broth
- 1-2 cups pre-cooked wild rice
- 1 can cooked chicken
- ½ cup finely grated carrots
- 3 Tbsp slivered almonds
- 1 cup milk
Saute minced onions in butter or oil.
Add flour and mix well
Gradually add chicken broth to flour paste/onioins.
Boil for approx. 1 min.
Stir in wild rice (pre-cooked)
Add chicken, carrots, slivered almonds & salt
Simmer for 5 min.
Blend in milk.
Garnish with parsley and chives
