Rice Chicken Soup

Ingredients

  • 1 Tbsp minced onion
  • 6 Tbsp butter or olive oil
  • ½ cup flour
  • 3 cups chicken broth
  • 1-2 cups pre-cooked wild rice
  • 1 can cooked chicken
  • ½ cup finely grated carrots
  • 3 Tbsp slivered almonds
  • 1 cup milk

Instructions

  • Saute minced onions in butter or oil.
  • Add flour and mix well
  • Gradually add chicken broth to flour paste/onioins.
  • Boil for approx. 1 min.
  • Stir in wild rice (pre-cooked)
  • Add chicken, carrots, slivered almonds & salt
  • Simmer for 5 min.
  • Blend in milk.
  • Garnish with parsley and chives
